Our mill is water-powered, just like the ones from the old popular tales, only it is real.
It was built in year 1000 by the monks, on the riverbank of the Chiascio river. We stone-grind according to the oldest tradition, using a French stone called Fertè. It is only used in the oldest mills, where they keep working in the same way they did centuries ago.
The movement is slow; therefore, the temperature remains low (below 35° C) and the grain stays alive, keeping the precious germ intact.
